On the 4th of March we night picked this excellent parcel of Shiraz at optimum flavour & handpicked a tiny portion of ripe Viognier. Both varieties were co-fermented on skins for 8 days to extract colour, fragrance & varietal character. Maturation was completed in 90% older French & American oak to retain fruit freshness & 10% new American oak.
Black/purple in colour, this powerful & exotic wine displays an aroma of lavender, black plum, purple rose, pepper & hints of vanillan oak, complemented by lifted apricot notes.
The palate exhibits mulberry, blueberry, liquorice & sweet apricot flavours with hints of black briary fruits & white pepper, all enhanced by firm tannins, subtle cedary oak & a long savoury finish.
Enjoy with rosemary lamb, sliced duck breast, Mongolian lamb or wagyu beef.
