We sourced Pinot Noir fruit from McLaren Vales oldest Pinot Noir vineyard, planted 40 years ago. The fruit was picked early to retain freshness and crisp acidity, ideal for Sparkling wine. Delicate skin contact of the free run juice ensured translucent pink colour, vibrancy and elegancy.
The bouquet exhibits fresh strawberry, red guava and apple. This refined Sparkling displays, strawberry, lemon and white cherry flavours, which are enhanced by subtle brioche autolysis characters from the secondary fermentation. The wine shows a fine bead, lively mousse and tight crisp finish.
