Eight Carat Sparkling Chardonnay Pinot Noir

We selected early picked McLaren Vale Chardonnay from our homestead block and Pig/Pony blocks as well as old vine Pinot Noir from Clay Creek.
This quality fruit has provided the perfect material for this fine sparkling wine. The bouquet exhibits fresh citrus, nectarine and hints of strawberry from the Pinot Noir. With the palate showing apple, peacharine and lemony flavours, which are enhanced by freshly baked bread yeast autolysis characters from the secondary fermentation.
An intense sparkler with a lively mousse and lingering finish.
